Grandma Moutray's Pumpkin Pancakes




2 c. Biscuit baking mix
2 tbs. brown sugar
2 tsp cinnamon
2 eggs
1 can (12 oz) evaporated milk
1/2 c. canned pumpkin
2 tbs veg. oil
1 tsp vanilla
maple syrup

In a bowl, combine the baking mix, brown sugar and cinnamon. Add eggs, milk, pumpkin, oil and vanilla. Mix well. 
Cook on hot griddle
Serve with Syrup
Yield: 1 dozen
